Barbecued beef fillet with garlic white bean salad

Pair this tender, juicy barbecued beef with a fresh, minty white bean salad for a delicious midweek lunch


Ingredients
Canned cannellini beans, rinsed, drained
2 400g can, (2x400g cans)
Red onion
½ small, chopped
Red capsicum
1 medium, chopped
Capers, rinsed, drained
2 tbs
Fresh mint
¼ cup(s)
Vinegar
2 tbs, (sherry)
Olive oil
1 tbs
Garlic
1 clove(s)
Beef fillet (tenderloin), raw
400 g, fat trimmed, (buy 500g)
Instructions

Place beans, onion, capsicum, capers, mint, vinegar, oil and garlic in a medium bowl and toss to combine.

Preheat a barbecue or chargrill over medium-high heat. Add beef and cook for 20-25 minutes, turning occasionally for medium rare or until cooked to your liking. Cover beef with foil and set aside to rest for 10 minutes. Thickly slice. Serve beef with bean salad.
