Pair this tender, juicy barbecued beef with a fresh, minty white bean salad for a delicious midweek lunch

Ingredients

Canned cannellini beans, rinsed, drained

2 400g can, (2x400g cans)

Red onion

½ small, chopped

Red capsicum

1 medium, chopped

Capers, rinsed, drained

2 tbs

Fresh mint

¼ cup(s)

Vinegar

2 tbs, (sherry)

Olive oil

1 tbs

Garlic

1 clove(s)

Beef fillet (tenderloin), raw

400 g, fat trimmed, (buy 500g)

Instructions

  1. Place beans, onion, capsicum, capers, mint, vinegar, oil and garlic in a medium bowl and toss to combine.
  2. Preheat a barbecue or chargrill over medium-high heat. Add beef and cook for 20-25 minutes, turning occasionally for medium rare or until cooked to your liking. Cover beef with foil and set aside to rest for 10 minutes. Thickly slice. Serve beef with bean salad.

Notes

SERVING SUGGESTION: Corn cobs and rocket leaves.TIP: Use any canned bean or grain you have on hand to make the salad, such as red kidney beans or chickpeas.
