Banh mi–style turkey burgers

This Vietnamese banh mi and burger fusion is a real winner. The slaw is quite mild, so feel free to add chopped coriander, sliced shallots or finely chopped chilli for added punch.


Ingredients
Turkey breast mince
500 g
Fresh coriander
2 tbs, finely chopped
Reduced salt soy sauce
3 tsp
Fresh ginger
2 tsp, finely grated
Garlic
2 clove(s), crushed
Coleslaw mix, without dressing
1 cup(s), (100g), fine-cut variety
Lebanese cucumber
½ medium, cut into matchsticks
Lime juice
2 tsp
Low-fat mayonnaise
1 tbs
Sweet chilli sauce
1 tsp
English muffin
4 regular, (4 x 65g), split, toasted
Oil spray
1 x 3 second spray(s)
Instructions

Place turkey, coriander, soy sauce, ginger and garlic in large bowl and mix to combine. Divide mixture evenly into 4. Shape each portion into a 10cm patty.

Lightly spray a grill pan with oil and heat over medium-high heat until hot. Cook patties for 4-5 minutes on each side or until lightly charred and cooked through.

Meanwhile, combine coleslaw mix, cucumber and lime juice in a medium bowl. Season with salt and pepper and toss well.

Mix mayonnaise with chilli sauce in a separate small bowl. Spread muffin bases with mayonnaise mixture. Top with burger patties, coleslaw and muffin tops.
