Balsamic onion, goats cheese and thyme tarts

Knock up these tasty little tartlets that are bursting with a whole lot of flavour.


Ingredients
Mountain bread
1 individual, white variety, cut into 9 even squares
Olive oil
2 tsp
Red onion
2 small, thinly sliced
Balsamic vinegar
2 tsp
Soft goat's cheese
20 g, marinated variety
Fresh thyme
1 tbs, leaves to serve
Oil spray
1 x 3 second spray(s)

Preheat oven to 180°C. Lightly spray eight holes of a mini muffin tin with oil. Press eight mountain bread squares into the prepared holes to form eight tart shells. Bake for 5 minutes or until golden. Cool in tin.

Meanwhile, heat the oil in a medium non-stick frying pan over low heat. Cook the onion, stirring occasionally, for 12 minutes or until golden. Add the vinegar and cook, stirring, for a further 3–4 minutes or until caramelised. Set aside to cool.

Divide the onion mixture between the tart shells. Top with the goat’s cheese and a few thyme leaves. Season with cracked pepper and serve.
