This dish makes a great easy weekend breakfast or brunch. Serve it topped with your favourite fresh fruit.

Ingredients

Raisin toast

8 slice(s), fruit bread (8 x 35g slices)

Egg(s)

3 medium

Icing sugar

2 tbs, plus ½ tsp extra to serve

Skim milk

2 cup(s), (500ml)

Vanilla bean extract, alcohol free

1 tsp

Ground nutmeg

1 pinch

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a 2L (8-cup) capacity shallow ovenproof dish with oil. Arrange bread slices in the prepared dish, overlapping slightly.
  2. Whisk eggs and sugar in a bowl until combined, then whisk in milk, vanilla and nutmeg. Pour mixture evenly over bread. Press bread down into custard mixture and refrigerate for 30 minutes to allow bread to absorb liquid. Meanwhile, preheat oven to 160°C.
  3. Transfer dish to oven. Bake for about 35 minutes or until puffed and browned. Stand for 10 minutes. Dust with extra icing sugar and serve warm.

Notes

You can prepare steps 1 & 2 of this recipe 1 day ahead (without preheating oven). Cover and soak overnight in the fridge. Next day, preheat the oven, then uncover dish and pop into oven, increasing cooking time by about 5 minutes.
