Baked eggs with prosciutto

Prosciutto fat trimmed
48 g, (buy 60g), fat trimmed, chopped
Reduced fat feta cheese
80 g, crumbled
¼ cup(s), (35g)
2 tbs, finely chopped
1 x 3 second spray(s)
- Preheat oven to 200°C. Lightly spray four 1-cup (250ml) ovenproof dishes or teacups.
- Lightly spray a small non-stick frying pan with oil and heat over high heat. Cook the prosciutto, stirring occasionally, for 2-3 minutes or until crisp. Transfer to a plate lined with paper towel to cool. Finely chop.
- Combine the feta, tomato, basil and prosciutto in a small bowl. Divide half the feta mixture between the dishes. Break 1 egg into each cup. Sprinkle with the remaining feta mixture. Bake for 8-10 minutes or until the eggs are just set.
SERVING SUGGESTION: steamed broccolini.
