Bacon and egg pizzas

The kids will go crazy for this one! It can be eaten for brekkie, lunch or dinner!


Ingredients
Shortcut bacon
80 g, chopped
Wholemeal pita bread
180 g, (4 x 45g)
Pizza sauce
⅓ cup(s), (80ml) tomato based
Light mozzarella cheese
⅔ cup(s), grated, (80g)
Egg(s)
4 medium
Fresh basil
¼ cup(s)
Oil spray
1 x 3 second spray(s)

Preheat oven to 180°C. Lightly spray a medium non-stick frying pan with oil and heat over high heat. Cook the bacon, stirring, for 2-3 minutes or until crisp.

Arrange the pita breads onto 2 large baking trays. Spread with the sauce and top with the bacon. Sprinkle the cheese around the edge of the breads, leaving a 7cm-diameter circle in the centre.

Carefully break an egg into the centre of each circle. Bake for 12-15 minutes or until the egg has just set and the bread is crisp. Sprinkle with the basil.
