Baby cos lettuce with herbed buttermilk dressing and crispy bacon
125 g, fat trimmed, thinly sliced
¼ cup(s), (60ml)
2 tbs, chopped
fresh flat-leaf parsley
1 tbs, chopped
grated parmesan cheese
⅓ cup(s), (25g)
4 baby, trimmed, quartered lengthways
- Lightly spray a small frying pan with oil and heat over medium-high heat. Cook bacon, stirring, for 3-4 minutes or until browned.
- Place buttermilk, lemon juice, chives, parsley and half the parmesan in a small bowl. Season with salt and pepper and whisk to combine.
- Arrange lettuce on a serving plate. Drizzle with dressing and sprinkle with bacon and remaining parmesan.
