Baby cos and grape salad

Ingredients
Snow peas
200 g
Asparagus
2 bunch(es)
Cos lettuce
360 g, (2 heads), leaves separated
Red globe grapes
300 g, halved
Apple cider vinegar
2 tbs
Olive oil
2 tbs
Fresh mint
¼ cup(s), shredded
Flaked almonds
2 tbs, toasted
Instructions

Place snow peas and asparagus in a large heatproof bowl. Have a large bowl of iced water ready. Cover snow peas and asparagus with boiling water. Stand for 1 minute, then drain and plunge into iced water. Drain and pat dry with paper towel.

Cut asparagus spears in half lengthways (unless very thin), then in half crossways. Thinly slice snow peas lengthways. Place in a large bowl with lettuce and grapes.

Whisk vinegar and oil together and season with salt and pepper. Drizzle over salad. Sprinkle with mint and almonds.
