Fell like avocado on toast for brekkie? Just say ‘yes peas!’

Ingredients

Frozen green peas

¾ cup(s), (90g)

Avocado

1 small

Lemon juice

2 tsp

Sourdough bread

4 slice(s), (40g slices) wholegrain, toasted

Reduced fat feta cheese

80 g, crumbed

Fresh basil

2 tbs, shredded

Olive oil

2 tsp

Instructions

  1. Bring a small saucepan of water to the boil over high heat. Cook peas for 2 minutes. Drain. Transfer to a medium bowl and set aside to cool slightly. Lightly crush peas with a fork. Add avocado and juice and roughly mash.
  2. Top toast with pea mixture and feta. Sprinkle with basil or mint and drizzle with oil. Season with pepper to serve.

Notes

SERVING SUGGESTION: Cherry tomatoes. If you have time, roast tomatoes for 15 minutes in an oven preheated to 180°C or 160°C fan-forced.
