Need to satisfy a sweet craving fast? Then look no further - these slices are perfect!

Ingredients

Reduced fat oil spread

125 g

Caster sugar

cup(s), (75g)

Egg(s)

1 medium

Lemon(s)

1 medium, rind, grated

White self-raising flour

1 cup(s), (150g) sifted

Skim milk

2 tbs

Apple(s)

2 medium, peeled, cored, thinly sliced

Ground cinnamon

1 tsp, to sprinkle

Instructions

  1. Preheat oven to 180°C. Lightly spray a 20cm x 30cm baking tin with oil and line the base and two long sides with baking paper, allowing the paper to hang 5cm over the sides.
  2. Use an electric beater to beat the spread and sugar until light and fluffy. Whisk in the egg and lemon rind until combined. Gradually add the flour and milk and stir until combined. Spoon into the prepared tin and level the surface with a spatula. Arrange the apple slices on top and sprinkle with the cinnamon. Bake for 25 minutes or until cooked.
  3. Serve warm or at room temperature.
