Apple and vanilla bean porridge

Freshen up your morning bowl of oats with these simple editions. Fragrant vanilla and sweet apple is combined with the oats and are all topped with crunchy good-for-you nuts.

Ingredients

dry rolled oats

1½ cup(s), (135g)

skim milk

2 cup(s), (500ml)

vanilla bean

½ whole, split, seeds scraped

red apple, unpeeled

1 large, finely grated

pepitas

1 tbs

pecans

30 g, coarsely chopped

maple syrup

2 tbs

Instructions

  1. Combine oats, milk, vanilla seeds and 1 cup (250ml) water in a large saucepan. Slowly bring to a simmer over medium heat. Cook, stirring occasionally, for 3 minutes or until oats are tender and creamy.
  2. Stir in apple. Set aside for 2 minutes to cool and thicken.
  3. Meanwhile, combine pepitas and pecans in a dry frying pan and cook over medium heat, stirring often, for 3 minutes or until fragrant and toasted.
  4. Divide porridge between serving bowls, sprinkle with toasted seed and nut mixture and drizzle with maple syrup.
