Simply pop these muffins in the oven and they'll be warm and golden by the time you finish getting dressed.

Ingredients

Green apple, unpeeled

1 medium

Dried fig(s)

80 g, finely chopped

Kellogg's All-Bran Cereal, Original

70 g, (1 cup)

Caster sugar

½ cup(s)

Skim milk

1½ cup(s), (375ml)

Honey

2 tbs

White self-raising flour

1 cup(s), (150g)

Ground allspice

3 tsp

Icing sugar mixture

¼ tsp, to dust

Instructions

  1. Grate apple into a small bowl and squeeze out excess juice with your hands. Discard juice.
  2. Combine the grated apple, fig, All-Bran, sugar, milk and honey in a medium bowl. Cover and refrigerate overnight.
  3. Preheat oven to 200°C or 180°C fan-forced. Lightly spray a 6-hole (¾-cup/180ml capacity) Texas muffin tin with oil. Sift the flour and spice into a large bowl. Stir in the apple mixture until just combined.
  4. Spoon mixture into prepared tin holes. Bake for 25 minutes or until cooked when tested with a skewer. Stand muffins in tin for 5 minutes before turning out onto a wire rack to cool. Serve lightly dusted with icing sugar.

Notes

These muffins will keep in an airtight container for up to 3 days.
