Recipe from Anna's cookbook, '50% weight loss, 100% healthier'. A filling and nourishing bowl of goodness. If you haven’t tried this edamame spaghetti, give it a go – oh my gosh, it is absolutely delicious! You’ll find it in the health-food section of larger supermarkets.

Ingredients

Black bean pasta

50 g

Pumpkin

½ cup(s), (75g), diced

Frozen green peas

½ cup(s), (60g)

Skinless salmon

50 g

Baby spinach

1 cup(s), (20g)

Boiled egg(s)

1 medium, hard boiled, halved

Cherry tomatoes

6 individual, grape variety, halved

Canned chickpeas, rinsed and drained

75 g, (buy 125g can)

Sesame seeds

½ tsp, black variety

Instructions

  1. Cook spaghetti in a saucepan of boiling salted water, following packet instructions. Drain.
  2. Meanwhile, steam pumpkin, peas and salmon until vegetables are tender and salmon is cooked to your liking. Drain. Season vegetables with salt and pepper.
  3. Arrange spinach, pasta, steamed vegetables, egg, tomatoes and chickpeas in a bowl. Flake salmon and add to bowl. Serve sprinkled with sesame seeds.
