Ingredients

White self-raising flour

¼ cup(s), (35g)

Baking powder

½ tsp

Ground cinnamon

1 tsp, or pumpkin pie spice

Pumpkin, cooked without added fat

½ cup(s), (85g), mashed

Egg(s)

2 medium, lightly beaten

Shortcut bacon

90 g, (buy 4 x 25g slices), fat trimmed

Sugar-free maple syrup

2 tsp

Oil spray

1 x 3 second spray(s)

Instructions

  1. Place flour, baking powder, pumpkin spice, mashed pumpkin and eggs in a bowl. Whisk until smooth.
  2. Lightly spray a large non-stick frying pan with olive oil and heat over medium heat. Spoon 2 tablespoon amounts of batter into pan to make 3 pancakes. Cook for 2 minutes or until bubbles appear on surface of pancake. Flip and cook for 1 minute or until golden and cooked through. Repeat to make 6 pancakes.
  3. Meanwhile, heat a small non-stick frying pan over high heat. Cook bacon for 2 minutes each side or until golden and crisp. Divide pancakes and bacon among plates and serve with a drizzle of maple syrup.

Notes

Tip: 1 serve is 3 pancakes.
