Ingredients
Red onion
1 small, finely chopped
Lean pork mince
500 g
Mushrooms
500 g, button variety, sliced
Red capsicum
1 medium, finely chopped
Corn
150 g, kernals
Garlic
3 clove(s), grated
Green shallot(s)
4 individual, thinly sliced
Soy sauce
1 tbs
Fish sauce
2 tsp
Light sweet chilli sauce
1 tbs
Lime zest
1 tsp, finely grated
Lime juice
1 tbs
Dried chilli flakes
1 tsp
Cos lettuce
2 baby, leaves separated
Oil spray
1 x 3 second spray(s)
Instructions

Lightly spray a wok with oil. Heat over a high heat for 20 seconds, stir-fry red onion and pork for 5 minutes, breaking up lumps as it cooks. Add mushrooms, capsicum, corn, garlic, three-quarters of the shallots, soy sauce, fish sauce, sweet chilli sauce, zest, juice and chilli. Stir-fry for 3 minutes or until liquid is evaporated.

Serve in lettuce leaves scattered with remaining shallot
