Anna's pear and walnut slice

Recipe by our WW Ambassador Anna. Follow her on Instagram @feedmehealthy_annavandyken. Perfect for afternoon tea, this slice uses fresh dates and pears to add sweetness. Using All-Bran helps boost the fibre content too so you can enjoy a delicious snack that will keep you feeling fuller for longer.
Kellogg's All-Bran Cereal, Original
1 cup(s), (230g), pitted, finely chopped
Unsweetened almond milk
1 cup(s), (250ml)
Vanilla bean extract, alcohol free
Canned pears in natural juice, drained
1 can(s), 410g can, (1 x 410g can) roughly chopped
⅓ cup(s), (35g) roughly chopped
White self-raising flour
1 cup(s), (150g)
- Preheat oven to 160°C. Line a 27cm x 17.5cm slice tin with baking paper.
- Place All-Bran, dates, almond milk, vanilla, pears, maple syrup, egg, cinnamon and two thirds of the walnuts in a large bowl. Stir to combine. Set aside to soak for 30 minutes.
- Gently fold through the flour in 2 batches, until combined. Pour mixture into prepared tin and sprinkle remaining walnuts over the top. Bake for 30 minutes or until set in the centre.
By leaving the mixture to soak for 30 minutes, the bran is able to breakdown before cooking creating a lovely texture in the slice.
