Recipe from Anna's cookbook, 'How I've Kept The Weight Off'. Anna absolutely love any type of crumble – apple, berry, pear – you name it! When in season, she loves the combination of ripe peach and blueberry. What a delicious taste sensation!

Ingredients

Peach(es)

600 g, peeled, sliced

Fresh blueberries

125 g

Ground cinnamon

½ tsp

Vanilla essence

1 tsp

Rolled oats, dry

½ cup(s), (45g)

Plain flour

45 g

Raw sugar

1½ tbs

Ground nutmeg

½ tsp

Reduced fat oil spread

40 g

Instructions

  1. Preheat oven to 180°C.
  2. Gently toss together peaches, blueberries, cinnamon and vanilla in a bowl.
  3. Place oats, flour, sugar, nutmeg and ½ teaspoon salt in a separate bowl. Dot oil spread over mixture and rub in with fingertips until combined.
  4. Spoon fruit evenly between 4 x 1 1⁄2 cup capacity ovenproof dishes. Sprinkle evenly with crumble mixture. Bake for 30-35 minutes or until crumble is golden.

Notes

Fresh fruit is best for this recipe. In the cooler months, you can swap peaches for ripe pears.
