Anna's easy mocha Weet-Bix slice is a quick and simple no-bake recipe that is perfect for any occasion. In just 10 minutes, you can prep this chocolaty slice that is sure to become a favourite. Made with fresh dates, espresso, Weet-Bix, shredded coconut, cocoa powder, honey, chia seeds, dark chocolate melts, and coconut oil, this slice comes together easily in a large food processor. Once the mixture is ready, simply press it into a lined loaf tin and drizzle with melted chocolate before refrigerating for an hour. Once set, cut it into 16 pieces and enjoy! This slice can be stored in a reusable container and kept in the fridge for up to 2 weeks.


Ingredients
Fresh dates
150 g, pitted, chopped
Coffee, espresso
100 ml
Wheat biscuit
9 individual, (9 x 15g)
Shredded or desiccated coconut
⅓ cup(s), (25g)
Cocoa powder
2 tbs
Honey
1½ tbs
Chia seeds
1 tbs
Dark chocolate melts
20 g
Coconut oil
¼ tsp
Instructions

Place dates and coffee in a medium bowl and set aside to soak for 10 minutes.

Process date mixture, wheat biscuits, ¼ cup coconut, cocoa powder, honey and chia seeds in a large food processor until mixture comes together.

Lightly spray a 14cm x 26cm loaf tin with oil and line base and sides with baking paper. Press mixture evenly into base of tin.

Place chocolate melts and oil in a small microwave-safe bowl. Microwave on High (100%) in 30 second bursts, stirring, until chocolate is melted. Drizzle chocolate over slice. Sprinkle with remaining coconut. Refrigerate slice for 1 hour or until set.

Remove slice from tin and cut into 16 pieces.
