Anna's cinnamon apple tartlets
2 medium, (300g) pink lady variety, peeled, diced
Vanilla bean extract
1 tsp, plus extra to serve
12 individual, (12 x 6g wrappers)
1 medium, lightly beaten
99% fat-free plain yoghurt
½ cup(s), (120g)
1 tbs, to serve
- Place apple, vanilla and cinnamon in a saucepan and cook, stirring occasionally, over a medium heat for 15–20 minutes or until tender. Set aside to cool slightly.
- Meanwhile, preheat oven to 180°C. Brush wonton wrappers with beaten egg and sprinkle with a little cinnamon sugar. Place wrappers, cinnamon side up, in a 12hole (1½ tablespoon capacity) mini-muffin silicone mould.
- Bake tart cases for 10–15 minutes or until golden and crisp. Cool slightly. Spoon warm apple mixture into cases and serve topped with a dollop of yoghurt and sprinkled with extra cinnamon and mint leaves.
