Super-easy chicken noodle soup

This one-pot soup recipe makes a great lunch, snack, or dinner starter. Stir in some canned beans to up the protein.

Ingredients
Salted butter
2 tsp
Canned tomatoes
15 oz, petite cut, rinsed and drained
Uncooked onion
1 large, finely chopped
Cooked boneless skinless chicken breast
6 oz, chopped
Table salt
1½ tsp, divided
Grated Parmesan cheese
2 Tbsp
Reduced sodium chicken broth
64 fl oz
Fresh lemon juice
2 tsp
Uncooked ditalini pasta
4 oz
Black pepper
¼ tsp
Frozen mixed vegetables
10 oz, such as peas, carrots, corn and green beans
Chives
¼ cup(s), fresh, chopped (optional)
Instructions

  1. Melt the butter in a large stockpot over medium-low heat. Add the onion and 1/2 tsp salt; cook, stirring often, until the onion is soft and translucent, about 10 minutes.

  2. Add the broth and increase the heat to high; bring to a boil. Stir in the pasta, frozen vegetables, and tomatoes; cook until the pasta is done, about 7 minutes.

  3. Stir in the chicken, cheese, lemon juice, remaining 1 tsp salt, pepper, and chives; cook for 1 more minute to heat through.

  4. Serving size: about 1 1/2 cups
