This Mexican-inspired tostada is so fast and tasty you will never skip breakfast again. Perfect for one but easy enough for more, the crispy tortilla makes a great base for the scrambled eggs, zesty guacamole, salsa, cilantro and salty fresh queso fresco. If cilantro is soapy to you, omit it or substitute parsley. Try salsa verde in place of traditional salsa for an easy variation.

Egg 2 large egg(s) | Guacamole 2 Tbsp |
Table salt 1 pinch(es) | Crumbled queso fresco cheese 1½ Tbsp, or feta |
Black pepper 1 pinch(es) | Cilantro 1 Tbsp, torn, for garnish |
Corn tortilla 1 tortilla(s), medium |
Instructions
- Scramble eggs in a nonstick skillet using cooking spray (using salt and pepper, if desired).
- Top tortilla with scrambled eggs; season with salt and pepper (optional). Top with salsa, guacamole and queso fresco; sprinkle with cilantro.
