Pork satay skewers

A long-time family favourite, satay skewers fill you up and are easy to make.

Ingredients

Pork leg steak, raw

500 g, diced

Ground cumin

1½ tsp

Garlic

2 clove(s), crushed

Olive oil

2 tsp

Brown onion

½ small, finely chopped

Light peanut butter

2 tbs, crunchy variety

Sweet chilli sauce

1 tbs

Light canned coconut milk

¼ cup(s), (60ml)

Instructions

  1. Combine the pork and half the cumin, the garlic and the oil in a medium bowl. Thread the pork onto 8 wooden skewers.
  2. Preheat a barbecue or chargrill on medium-high. Cook skewers for 4-5 minutes each side or until pork is cooked through.
  3. Meanwhile, heat the remaining oil in a small saucepan over medium heat. Cook the onion and remaining garlic, stirring, for 3-4 minutes or until softened. Add the remaining cumin and cook, stirring, for 1 minute. Add the peanut butter, chilli sauce, coconut milk and 2 tablespoons water and cook, stirring, for 2-3 minutes or until the sauce thickens. Serve skewers drizzled with the sauce.

Notes

SERVING SUGGESTION: Salad of watercress and thinly sliced red onion and celery, plus steamed jasmine rice and lime wedges.
