Notes

Toss together ½ cup cooked cellophane noodles, 80g shredded skinless, BBQ chicken, ½ grated carrot, ½ thinly sliced red capsicum, 1 sliced Lebanese cucumber, 1 sliced green shallot, 1 tbs sweet chilli sauce, 1 tsp sunflower oil and ½ juiced lemon. Top with 1 tbs chopped peanuts.
