Notes

Pan-fry chopped bacon until crisp. Combine with sliced celery, capsicum, onion and snow peas, canned corn, canned chickpeas and lettuce. Whisk a little olive oil and lemon juice. Drizzle over salad and season with salt and black pepper. Serve with wholemeal bread. Follow with a piece of fresh fruit.
