Heat a frying pan. Cook 1 large field mushroom, top-side up, until lightly golden. Turn mushroom over and carefully pour 1 egg into the centre. Bake in oven preheated to 180°C or 160°C fan-forced until egg is cooked to your liking. Sprinkle with fresh chives (chopped) and serve with rocket leaves and 1 x 40g slice high-fibre white bread (toasted).
