Garlic

canned chickpeas, rinsed and drained

¾ cup(s), ,drained, rinsed

Orange sweet potato (kumara)

1 cup(s), ,peeled, chopped

Zucchini

1 small, ,ends trimmed, chopped

whole tomato canned in tomato juice

200 g, ,chopped

fresh coriander

2 tbs, ,chopped

Cooked brown rice

¾ cup(s), ,kept warm

Notes

Heat a saucepan over medium-high heat. Spray with oil. Add onion and garlic and cook until soft. Add spices and cook for 30 seconds. Add chickpeas, sweet potato, zucchini and tomatoes. Cover and simmer for 15 minutes or until tender. Season with salt and pepper. Stir through coriander and serve with rice.
