This zucchini and ham slice recipe is sure to become a family favourite. It takes approximately 55 minutes to make and serves 8 people. The ingredients include grated zucchini, carrot, onion, garlic, ham, cheddar cheese, eggs, olive oil, and self-raising flour. All these ingredients are mixed together and seasoned with salt and pepper before being baked in the oven for 35-40 minutes until golden and set. It can be served warm or cold, and is best paired with a salad of mixed lettuce leaves and cherry tomatoes, drizzled with French dressing or lemon juice.

Zucchini
3 medium, grated
Carrot(s)
1 small, grated
Brown onion
1 medium, grated
Garlic
2 clove(s), crushed
97% fat-free deli sliced ham
150 g, chopped
Extra light cheddar cheese
1 cup(s), grated, (120g)
Egg(s)
5 medium, lightly beaten
Olive oil
1 tbs
White self-raising flour
1¼ cup(s), (185g)
Oil spray
1 x 3 second spray(s)

Preheat oven to 180°C. Lightly spray a 16cm x 26cm slice tin or baking dish with oil. Line base and sides with baking paper, extending paper 4cm above edge of tin on long sides.

Place all ingredients in a large bowl and mix until well combined. Season with salt and pepper.

Spread mixture into prepared dish and smooth the surface. Bake for 35–40 minutes or until golden and set. Set aside in tin for 5 minutes, then use lining paper to lift slice from tin. Cut into 8 even pieces. Serve warm or cold.
