Wilted Tuscan kale with garlic crumbs

Transform cabbage with a hint of lemon zest and garlic crumb.


Ingredients
Olive oil
1 tbs
Dried breadcrumbs
¼ cup(s), made from 20g sourdough bread
Garlic
2 clove(s), sliced
Fresh lemon rind
1 tsp, finely grated
Kale
300 g, (1 bunch), Tuscan variety, rinsed, shredded
Lemon juice
1 tbs
Grated parmesan cheese
¼ cup(s), (20g)
Instructions

Heat oil in a large non-stick frying pan over medium heat. Cook breadcrumbs and garlic, stirring, for 3-4 minutes or until golden. Sprinkle with lemon rind and remove from heat. Cook cabbage in same pan with a squeeze of lemon juice, stirring, for 2-3 minutes or until wilted. Toss through garlic crumbs and grated parmesan cheese to serve.
