Tomato and carrot soup

Get a delicious hit of vegies from this super easy soup. Simply soften the ingredients on the stove, then blend until smooth


Ingredients
Brown onion
1 medium, finely chopped
Carrot(s)
1 medium, chopped
Celery
1 stick(s), trimmed, chopped
Garlic
1 clove(s), crushed
Tomato(es)
1000 g, chopped
Oil spray
1 x 3 second spray(s)
Instructions

Spray a large saucepan with oil and heat over medium-high heat. Add onion, carrot and celery and cook, stirring, for 5 minutes or until vegetables have softened. Add garlic and cook, stirring, for 30 seconds or until fragrant.

Add tomatoes and 2 cups (500ml) water and bring to the boil. Reduce heat to low and simmer for 20 minutes.

Using a stick blender or food processor, process soup until smooth. Return soup to low heat. Stir until heated through. Season with salt and freshly ground black pepper to serve.
