Teff porridge with dates and apple

With a mild nutty flavour, teff is packed with protein, iron, calcium and amino acids. When cooked, it has a similar taste to raw cacao powder and adds a crunchy texture to salads or porridge.


Ingredients
Brown teff
200 g, (1 cup)
Coconut milk, reduced-fat, unsweetened
1 cup(s), (250ml)
Vanilla bean extract, alcohol free
½ tsp
Ground cinnamon
½ tsp
Mixed spice
¼ tsp
Fresh dates
6 individual, pitted and chopped
Green apple, unpeeled
1 medium, grated
Coconut, grated and desiccated
20 g, flakes, toasted
Pistachios
1 tbs, chopped, toasted
Maple syrup

Heat a heavy-based frying pan over medium heat. Cook teff for 3-4 minutes, shaking pan frequently, until toasted. Grains will start to pop when toasted.

Transfer teff to a medium saucepan. Add 2 cups (500ml) water, coconut milk, vanilla, cinnamon, mixed spice and half the dates. Bring to the boil. Stir and reduce heat to low. Cook, stirring occasionally, for 15-20 minutes or until thick and creamy.

Spoon porridge into serving bowls. Top with remaining dates, apple, coconut flakes, pistachio and syrup.
