Quick chilli con carne

Chilli con carne is always a fab go-to dish. Our tasty version is filled with spices, kidney beans and fresh tomatoes.

Ingredients

Brown onion

1 medium, finely chopped

Green capsicum

1 medium, finely chopped

Celery

1 stick(s), stick, finely chopped

Extra lean beef mince, raw

400 g

Smoked paprika

1 tbs

Ground cumin

2 tsp

Dried oregano

1 tsp

Tomato paste

1 tbs

Tomato(es)

2 large, ripe, finely chopped

Canned red kidney beans, rinsed, drained

1 can(s), (1 x 400g can)

Oil spray

1 x 3 second spray(s)

Instructions

Heat a large non-stick frying pan over medium-high heat. Lightly spray with oil. Cook onion, capsicum and celery, stirring occasionally, for 5 minutes or until softened. Add mince and cook, stirring to break up lumps, for 5-7 minutes or until browned.

Add paprika, cumin and oregano and stir for 1 minute or until fragrant. Add tomato paste, tomato, beans and ½ cup (125ml) water. Reduce heat and simmer for 5 minutes or until thickened.
