Reduced fat oil spread
¼ cup(s), (60g), melted
Egg(s)
2 medium
Caster sugar
¼ cup(s), (55g)
Orange rind
1 tbs, finely grated
Plain flour
¾ cup(s), (115g)
Baking powder
1 tsp
Ground cinnamon
1 tsp
Freshly squeezed orange juice
1 tbs
Icing sugar
1 tsp

Preheat oven to 180°C. Using 2 teaspoons of spread, lightly grease 20 holes of two 12-hole madeleine tins.

Using electric beaters, beat eggs, sugar and rind in a large bowl until thick and pale. In a medium bowl, sift flour, baking powder and cinnamon together 3 times. Using a large metal spoon, gently fold flour mixture into egg mixture with remaining spread and juice.

Spoon mixture among prepared holes. Bake for 8 minutes or until golden and firm to the touch. Set aside in tins for 2 minutes before transferring to a wire rack to cool. Dust with icing sugar.
