Ham, herb and cottage cheese fritters

These fluffy fritters using cottage cheese make the perfect light lunch, great for the family or an easy option to prepare ahead and take with you to work.


Ingredients
97% fat-free cottage cheese
350 g
Egg(s)
2 medium
97% fat-free deli sliced ham
75 g, chopped
White self-raising flour
½ cup(s), (75g)
Green shallot(s)
2 individual, finely chopped
Fresh flat-leaf parsley
1 tbs, finely chopped
Fresh mint
1½ tbs, finely chopped
Olive oil

Whisk 1¼ cups (250g) of cottage cheese and egg in a large bowl until combined. Stir in the ham, flour, shallot, parsley and 1 tablespoon of mint until combined. Season with salt and pepper.

Heat half of the oil in a large non-stick frying pan over medium-high heat. Drop six 2-tablespoonful quantities of mixture into the pan to make 6 fritters. Reduce heat to medium and cook for 4 minutes each side or until golden and puffed. Wipe the pan clean with paper towel. Repeat with the remaining oil and cheese mixture to make another 6 fritters.

Serve the fritters with a dollop of the remaining cottage cheese and the mint.
