Ingredients
Olive oil
2 tsp
Extra lean pork sausage
400 g
Brown onion
1 medium, coarsely chopped
Garlic
2 clove(s), finely chopped
Carrot(s)
3 medium, sliced
Curry powder
3 tsp, mild
Beef stock cube
1 individual, gluten-free variety, to make 2 cups (500ml) beef stock
Tomato chutney
1 tbs
Frozen green peas
½ cup(s), (60g)
Fresh coriander
½ cup(s), leaves
Instructions

Heat half the oil in a large deep non-stick frying pan over medium heat. Cook sausages, turning, for 2 minutes or until light golden. Transfer to a plate. Cut in half widthways.

Heat remaining oil in same pan over medium heat. Cook onion, garlic and carrot, stirring, for 3 minutes or until softened. Add curry powder and cook, stirring, for 30 seconds or until fragrant. Add stock, chutney and sausages and bring to the boil. Reduce heat and simmer, uncovered, stirring occasionally, for 25 minutes.

Add peas and simmer, covered, for 2 minutes or until heated through. Sprinkle with coriander to serve.
