Ingredients
99% fat-free, plain Greek yoghurt, unsweetened
⅓ cup(s), (80g)
Fresh lemon rind
1 tsp, finely grated
Lemon juice
2 tsp
Apple cider vinegar
1 tbs
Fresh coriander
¼ cup(s), coarsely chopped
Green shallot(s)
6 individual
Green cabbage
200 g, finely shredded
Carrot(s)
1 medium, coarsely grated
Green apple, unpeeled
1 medium, cut into matchsticks
Instructions

To make dressing, stir yoghurt, lemon rind and juice, vinegar and coriander in a small bowl until combined. Season with salt and pepper.

Cut shallots into 7cm lengths, then cut into thin strips. Combine shallots, cabbage, carrots and apple in a large bowl. Drizzle over the dressing and toss well.
