Soaked in hot, strong coffee overnight, mixed dried fruit is combined with white self-raising flour and chopped milk chocolate with dried fruit and nuts to create a moist and flavourful cake that's perfect for any occasion. Coffe, long black
2 cup(s), (500ml), hot, strong
White self-raising flour

Chocolate block, milk with dried fruit and nut

Combine dried fruit and coffee in a large heatproof bowl, then cover and set aside to soak overnight.

Preheat oven to 160°C or 140°C fan-forced. Line base and two long sides of an 18cm x 28cm lamington pan with baking paper. Add flour and chopped chocolate to fruit mixture, stirring well to combine. Spread mixture evenly into prepared pan. Bake for 40 minutes or until a skewer inserted into centre comes out clean. Cool coffee and chocolate fruit cake in pan completely before serving.
