This hearty, prep-ahead breakfast comes together in a snap the night before, and cooks up in the morning in just half an hour. It sets you up for several days of easy, healthy morning meals: Simply reheat a piece in the microwave for about a minute and top with fruit. Grated apple in the oat mixture adds a little crunchy texture and lots of sweetness, replacing much of the added sugar you might otherwise expect. Though we call for berries as the topping, you can use any fruit you have on hand—try sliced bananas, orange segments, pomegranate seeds, or diced pears.

Rolled oats, dry

Brown sugar
¼ cup(s), (55g), tightly packed
Ground cinnamon
2 tsp
Baking powder
1 tsp
Egg(s)
2 medium
Skim milk
1⅓ cup(s), (330ml)
Vanilla bean extract, alcohol free
1 tsp
Apple(s)
2 medium, unpeeled, grated
Pecans
⅓ cup(s), (40g), chopped
Fresh berries
3 cup(s), (485g), chopped if large
Oil spray
1 x 3 second spray(s)

Preheat oven to 190°C. Combine oats, sugar, cinnamon, baking powder and ¼ teaspoon salt in a large bowl. Whisk eggs, milk, vanilla and ¾ cup (185ml) water in a separate medium bowl. Stir egg mixture into oat mixture until combined. Fold in apples.

Lightly spray a 18cm x 28cm baking dish with oil. Spoon in oat mixture, then scatter over pecans. Bake for 25-30 minutes, until lightly golden. Cut into 6 even slices. Serve warm, topped evenly with berries.
