Chilli pork, broccolini and noodle stir fry

Noodles can be made from wheat, rice, mung bean, buckwheat or egg, so if you are coeliac or gluten intolerant you can still enjoy eating and cooking with noodles.


Ingredients
Fresh rice noodles
225 g
Broccolini
1 bunch(es), ends trimmed, coarsely chopped
Oil spray
1 x 3 second spray(s)
Pork mince, raw
400 g
Sweet chilli sauce
60 ml, with ginger
Oyster sauce
2 tbs
Lime(s)
1 medium, wedges to serve
Instructions

Prepare the noodles following packet instructions. Separate noodles with a fork. Drain.

Meanwhile, boil, steam or microwave broccolini for 1 minute or until just tender. Drain and rinse under cold water.

Heat an oil-sprayed wok or large non-stick frying pan over high heat. Add mince. Stir-fry, to break up lumps, for 2–3 minutes or until browned. Add broccolini, noodles, combined sauces and 1 tablespoon water. Stir-fry until heated through. Serve with lime wedges.
