Apple and sultana cake

If you love apple pie, you’ll be a firm fan of this easy cake that’s sweetened with honey and flavoured with warming mixed spice.

Honey
¼ cup(s), (90g), plus 1 tsp for brushing
99% fat-free, plain Greek yoghurt, unsweetened
75 g
White self-raising flour
1⅓ cup(s), (200g)
Mixed spice
1 tsp
Red apple, unpeeled
2 large, cored, thinly sliced
Sultanas
50 g

Preheat oven to 160°C. Lightly spray a 20cm square (base measurement) cake tin with oil and line base and sides with baking paper, extending paper 2cm above the edge of tin.

Whisk eggs, honey and yoghurt in a large bowl until combined. Sift flour and mixed spice over egg mixture, then fold in to form a smooth batter. Set aside about 15 apple slices. Stir the remaining apple slices and sultanas into batter.

Pour batter into prepared tin and smooth the top with a spatula. Arrange reserved apple slices over top. Bake for 30-35 minutes, until golden brown and a skewer inserted into the centre of cake comes out clean.

Brush the extra 1 teaspoon honey over hot cake. Stand in tin for 10 minutes, then turn out onto a wire rack to cool. Cut into 12 pieces.
