chicken breast mince

canned diced tomatoes

200 g

Canned mixed beans

½ can(s), (1/2 x 400g can) drained, rinsed

dried chilli flakes

¼ tsp


¼ medium, mashed

red onion

¼ small, finely chopped

fresh coriander

1 tsp, chopped


Heat oil in a frying pan. Cook mince until browned. Add tomatoes, mixed beans and a pinch of chilli flakes. Cook, stirring, until chicken is cooked through. Season with salt and pepper. Serve topped with avocado, onion and coriander leaves.
