Notes

Heat baked beans and keep warm. Pan-fry bacon in a pan until golden. Transfer to a plate and keep warm. In the same pan, cook tomatoes until softened. Add baby spinach leaves and cook until wilted. Season with salt and pepper. Top bread with baked beans, spinach, bacon, tomatoes and cottage cheese. Season with salt and pepper. Serve.
