1. Chicken with lime, avocado and pumpkin Cruskits

Spread 1 tbs avocado over 2 Cruskits (rye, corn, rice or light variety) and sprinkle a pinch of Mexican seasoning over the top, then layer 80g of diced, cooked pumpkin, 100g of shredded grilled skinless chicken breast and a squeeze of lime on top. Add some parsley or coriander on top if it’s to your taste.
2. Smoked salmon, cottage cheese and capers Cruskits

Cool, peel and mash 2 hard-boiled eggs with 3 tsp low-fat mayonnaise. Season to taste with salt and pepper. You could even add a pinch of curry powder. Spread over 2 Cruskits (rye, corn, rice or light variety) and top with shredded lettuce.
6. Broad bean, tuna and feta Cruskits
