Usually, chili recipes require quite a bit of work, maybe a crock-pot, and definitely a lot of people to eat their massive yield. But this recipe for chipotle-black bean chili keeps it simple. To make it, all you need is 17 minutes, and one hungry person since it produces just a single serving! You just combine the six ingredients in a bowl and pop 'em in the microwave; it doesn't get much simpler than that! And really, what's better than a one-step recipe? When you're done creating this rich, hearty dish, top it with some optional fresh lime for touch of acidity.

Ingredients

Canned diced tomatoes

1 cup(s), fire-roasted variety

Yellow bell pepper

½ medium, chopped

Canned black beans

½ cup(s), rinsed and drained

Canned chipotle peppers in adobo sauce

½ tsp, or more to taste

Chili powder

1 tsp

Cilantro

2 Tbsp, fresh, chopped

Instructions

  1. Combine all ingredients, except cilantro, in a microwave-safe bowl; cover and microwave on high until peppers are tender, 7 minutes. Stir in cilantro.
  2. Makes 1 serving.
