I thought this was delicious! Changes I made:
- left the chicken thighs whole
- used more mushrooms
- added chopped celery
- increased tomato paste to 2 or 3T
- added quite a bit of dried basil, oregano and garlic powder
Make sure you use the FIRE ROASTED tomatoes. They have much more flavor than regular. Super tasty and even my young kiddos liked it. Cooked about 4 hours on high.
Family loved this with a few changes. Used cut-up whole chicken (skin removed), also added fresh carrots, green beans, celery and capers for some extra flavor. Tastes better the next day!
This recipe smelled better than it tasted - seemed to be missing something as it was kind of bland. Might try it again with fresh oregano.
I used chicken breast meat but the outcome was the same, Fantastic! This was, by far, the best chicken cacciatore recipe I have ever used. You'd never know it was Weight Watchers.
