Ingredients

2 cup(s) Chinese cabbage, coarsely shredded (also known as Napa cabbage)
|
|
1 medium orange(s), peeled, pitted and diced*
|
|
1/2 cup(s) red onion(s), finely chopped
|
|
1 1/2 cup(s) roasted skinless turkey, chopped or diced
|
|
|
2 Tbsp hoisin sauce
|
|
|
1 Tbsp balsamic vinegar
|
|
|
2 Tbsp orange juice, freshly squeezed
|
Instructions
- In a medium-size salad bowl, combine cabbage, orange, onion and turkey.
- In a small cup, stir together hoisin sauce, vinegar and orange juice; pour over salad and toss gently until well-coated. Yields about 2 1/2 cups per serving.
Notes- *Ruby-red fleshed blood oranges make a beautiful substitute for the conventional orange in this salad. Make the swap when available and then substitute 1/2 cup of chopped scallions for the red onion for color contrast.
