2 1/2 cup(s) all-purpose flour
|
|
|
1 Tbsp baking powder
|
|
|
1/2 tsp table salt
|
|
1 large egg(s)
|
|
|
1/3 cup(s) ginger preserves
|
|
|
1/2 cup(s) apple butter
|
|
|
2 Tbsp light butter, melted
|
|
|
1/4 cup(s) sugar
|
|
4 medium apricot(s), coarsely chopped
|
|
|
1 Tbsp fat-free creamer, such as fat-free half-and-half
|
Instructions
- Preheat oven to 400ºF. In a large bowl, whisk together flour, baking powder and salt.
- In a medium bowl, whisk together egg, preserves, apple butter, butter, sugar and half-and-half. Add to dry ingredients and stir to combine; gently stir in apricots.
- Divide batter among 12 nonstick muffin cups. Bake until golden brown on top and toothpick inserted in center of a muffin comes out clean, about 35 minutes.
