These delicious muffins make great use of summer's sweet and succulent fresh apricots. Buy extras and make our Apricot Dessert Quesadillas, too.
 

Ingredients

2 1/2 cup(s) all-purpose flour   
1 Tbsp baking powder   
1/2 tsp table salt   
1 large egg(s)   
1/3 cup(s) ginger preserves   
1/2 cup(s) apple butter   
2 Tbsp light butter, melted   
1/4 cup(s) sugar   
4 medium apricot(s), coarsely chopped   
1 Tbsp fat-free creamer, such as fat-free half-and-half   

Instructions

  • Preheat oven to 400ºF. In a large bowl, whisk together flour, baking powder and salt.

  • In a medium bowl, whisk together egg, preserves, apple butter, butter, sugar and half-and-half. Add to dry ingredients and stir to combine; gently stir in apricots.

  • Divide batter among 12 nonstick muffin cups. Bake until golden brown on top and toothpick inserted in center of a muffin comes out clean, about 35 minutes.
