Very moist, easy, and delicious. I used 1 pound of ground turkey and no beef. I cooked it in a muffin tin, dividing it evenly for 12 servings - 2 points per serving. I cooked them for 20 minutes, then poured the extra enchilada sauce over each of the 12 muffin tin servings and cooked for about 5 to 10 more minutes, checking for doneness. It's great that you can freeze them for later. My husband doesn't normally like meatloaf but he loved these.
