This is a fairly quick, hearty, one-pot recipe that will feed a huge group (or generate tons of leftovers). I didn't have tomato juice so I combined tomato paste with water instead for my liquid - but it came out fine. Not very spicy, only a slight kick, so feel free to add hot sauce or something. It's a solid recipe that allows for tweaking to your liking. Also, you can easily get by with just 1 can of beans. Cheese topping is the best part! Very filling and satisfying.
