I was in a big hurry when I made this, along with the "Easy Fried Rice" recipe also on this website. I forgot to add the bamboo shoots, and I also substituted minced onion for the garlic. I left the cashews on the side because of those who didn't want it on their serving. I also used olive oil instead of peanut oil! It all still turned out delicious and I can't believe how much my family loved it. I will definitely make it again!
