I actually made this as a "go to" snack and a way to get my veggies in. I am not a huge fan of veggies and am trying new ways to incorporate them. I made a double batch of this and after I cooked the soup I let it cool and blended it in my blender. This actually worked out really well as I was able to keep the pitcher of blended soup in my fridge. When I am ready to have some I just pop the belnder pitcher on the base, blend, pour in to a mug, heat, and sip!
